Over the course of several videos, I'll be converting an old "Frigidaire" refrigerator into a meat smoker using a propane gas burner for my heat source. I also plan on giving this a "Real Flame" paint job when finished. I will probably mount this on a trailer along with a grill capable of cooking at higher heats , not just smoking. Eventually I hope to make this an all around rig, including burners for frying fish and sinks with hot running water!

Weber Gas Grills - How to Smoke Food on a Weber Gas Grill

One thing that many gas grill owners do not realise is the fact that their existing gas grills can be genuinely used as barbecue smokers with a little ingenuity and a few dollars. Smoking food adds a greater range of flavour.

These days, many of us have switched to the cleaner, ergonomic gas grills, and you may be surprised to find that the Weber gas grill can be used as an perfect smoker thanks in part to their superb build quality and large internal cooking area.

Smoker Grill

The most prominent thing is to put the wood chips on when the grill is cool, you want to avoid adding your wood-chips while the grill is too warm or else your wood-chips will smoulder and be ineffective for cooking with.

You should put in order your wood-chips in sufficient water, allowing them to soak for around 30-60 minutes prior to cooking. This will ensure that they are properly moistened and will deliver smoke correctly to your food.

When selecting wood-chips to smoke your food, avoid using liquid smoke that is generally available as this usually does not reveal flavour as well as good quality wood-chips. Green wood-chips are undesirable as they refuse to burn properly, instead make your mind up good quality aged chips as they produce a far more pleasing taste.

You should avoid the temptation of continually adding them to the smoking tray while the course of cooking as not only will this drain the heat and growth cooking time but it will also add a bitter taste to your food.

Now lift out the cooking grates from your Weber gas grill, and place your ready wood-chips in a convenient metal or disposable aluminium tray and place this "smoking tray" to the far lower left side of the grill away from the burners, ensuring that they are not too close to the flame.

Once you have positioned your smoking tray in the spoton position, replace the grates on your Weber grill, and now you should preheat the grill for smoking. Turn all of your grill burners on to full, and allow all them to run for around 20 minutes or so until the wood-chips produce smoke and the internal temperature of the grill has been raised sufficient ready to start cooking your food.

Now that your wood-chips are smoking well, turn off the middle burners, replace the grills using mitts for safety, and add your food to the grill over the central area so that your food cooks using indirect heat. Close the grill as swiftly as inherent once you have added all of your food and leave it alone until your food is properly cooked.

If you are using a Bbq sauce on your meats, only add it to your food while the last 20 or 30 minutes of cooking time, as the sugar content will lead to caremelisation and will corollary in a burnt coating on your food, so pay concentration to the temperature and remaining cooking time.

It is recommended that you should use a cut off Bbq thermometer to portion the temperature of your food to ensure that your food is properly cooked, and you should avoid pushing the temperature probe into any fat pockets or too close to any large bones in the meat as this will produce inaccurate readings.

At the end of the smoking process, your barbecue food will be smoked and cooked to perfection in your Weber gas grill. To get the best results, and it should go without saying, avoid boiling any of your meat prior to barbecuing as this drains the flavour from your food.

It is well worth experimenting with separate wood-chip combinations and meats as you will scrutinize personal flavour combinations that suit your palette.

choosing the perfect Bbq Smoker

Choosing the perfect Bbq smoker can be difficult because there are So Many to select from. In every price range - from bucks to ,000 bucks there are any dissimilar choices. But it is your price range that is the most foremost choosing factor - so that is what you need to resolve on first.

Money, Money Money

Smoker Grill

Of course, if you can afford a ,000 custom-made smoker - then propose getting a practice job with all the bells and whistles. But most of us can't afford anywhere close to that, so we have to define a budget for our Bbq smoker.

If you have a small budget, or are just starting out, then I would propose a Weber Smokey Mountain. It's small, it's easy to control and it will be a great smoker that will get you the practice you need to start turning out top-quality Bbq.

The Weber Smokey Mountain (you might hear some citizen refer to them as Wsm's) nothing else but holds temperature very well and they have the room you need to cook bigger cuts of meat.

You can even use these "starter smokers" in Bbq competitions. In fact, any Kcbs Bbq teams just use a integrate of these for entire contests.

Capacity, Capacity, Capacity

The grill you select will have a lot to do with the function it will be performing. If you are just planning to smoke in your backyard for house and friends, then you don't need a smoker that is nothing else but large.

If you are planning on cooking in competition Bbq contests, then you need a smoker that will deal with the bigger cuts of meat (especially if you are going to start cooking in the Mbn circuit). I would propose a small, vertical (upright) smoker such as a Backwoods Party Model or Fec 100. Both these smokers are under 0 and if taken care of properly, they will last you a very long time.

Dry Heat vs. Wet Heat

There are 2 dissimilar types of smokers - Dry Heat Smokers and Water Pan Smokers. Water Smokers simply have a water pan that separates the fire source from the cooking chamber. As the fire source heats up, it turns the water into a "wet heat" and provides a moist cooking environment.

This water pan also acts as a heat regulator and keeps the internal temp inside the smoker at an even level. There are a few citizen that will try and argue that the water pan can preclude a nice bark from forming on the meat, but I don't have any problem construction my bark with a Water Pan Smokers.

I all the time use Water Pan Cookers because it gives me a juicer, more tender Bbq meat... But some of these smokers can be a petite pricey.

The smokers some citizen refer to as "Stick Burners" don't usually have a water pan and are Dry Heat Smokers. Some prefer these Dry Heat smokers because they claim to divulge more smoke and give a better bark... But they don't keep the meat quite as moist and the chambers are a petite harder to keep at a steady temp.

But really, it all comes down to personal preference. I have meet Bbq pit masters using a Dry Heat Smoker who can cook meat that is just as moist as I can on my Water Pan Smoker. But I can furnish the bark on my Water Pan Smoker that is prettier than any cooked on a Dry Heat Smoker.

If you don't have any budget in mind, I would propose a larger commercial-style smoker... A Southern Prides or Old Hickory Pits for your Dry Smokers and a Backwoods expert Model for your Water Pan Smoker.

Each smoker you look at will it's pro's and con's - they all do. choosing on what is best for you personal situation is entirely up to you. I just hope these tips helped give you a good start in the right direction.

How Long Do You Grill Chicken Legs and Thighs?

Chicken Legs and Thighs are the most eaten parts of the chicken, and for good conjecture since they are cheap to buy and easy to cook. But mostly because they are juicy, taste great, and have a built in handle.

Directions:

Smoker Grill

1. Make sure that the chicken has been rinsed wholly before cooking, unless the chicken is soaking in a marinade.

2. Pre-heat the grill on med (240 degrees) and place the legs/thighs on the grill. Legs/thighs grill much great at a lower temperature for a longer period of time.

3. Frequent turning of the legs/thighs will insure a more even cooking, but will preclude any clear sear marks.

4. Legs/thighs come in so many sizes that it is hard to say exactly how long to cook in minutes. Start by letting the bottom side cook to a golden brown before turning. Continue turning as each side browns. If the face is browning in only a wee or two than the heat is probably up to high and the face will burn before the inside is cooked.

5. If juices are advent out of the chicken then you have cooked it through and it may start to become dry if allowed to cook much longer. You can make a small cut in the chicken at the thickest point to see if it is still pink in the middle. It is preferable to not make any cuts though, because this will break the seal and allow the juices to escape manufacture the chicken dry.

6. Take off the chicken from the grill and allow to cool a wee before eating. This would be a good time to brush on your popular sauce.

Safe Internal Temperature: 165 degrees

Tips:

* Grilling legs/thighs at too high a temperature will burn the face of the chicken without cooking all the way through to the inside.

* Grilling legs/thighs at too low temperature may preclude the face from getting brown and crispy. The chicken may also be dry.

* Be just if you brush bbq sauce on while cooking. The chicken may burn easier and flavor the chicken with a burnt charcoal taste.

* To get the full flavor of the bbq sauce wait until the legs/thighs are done cooking and then brush on the sauce.

Discovering Smoked Barbecue - The Ceramic Kamado Cooker - What is It?

If you are a barbecue aficionado, perhaps you have heard of the Kamado Cooker. perhaps not. The Kamado type cooker is a heavy ceramic vessel used both as a smoker and and as a grill. The "Big Green Egg" is the name brand of one type of Kamado Cooker. There are other brands to pick from. They all work basically the same way, and are actually just a obvious style of a vertical smoker.

There are ordinarily three types of smokers to pick from when cooking barbecue. One is the offset smoker, which has a fire box set off from the smoke chamber. The meat sits on top of racks in the smoke chamber. Smoke and heat enter the smoke chamber, flow colse to the meat, and exit straight through a chimney system.

Smoker Grill

The next style of barbecue smoker is a kettle grill/smoker. Think "Weber Kettle Grill". This type of grill can be set-up for use as an indirect smoker. To use as a smoker, charcoal is piled up to the sides of the kettle, and the meat is located in the center of the grill, not directly over the hot coals. Smoke from the coals goes colse to the meat giving it that smokey good flavor before exiting the wee vents in the top of the lid. This type of smoker, low tech as it is, will turn out fine tasting barbecue.

Finally, the last style of barbecue smoker is a vertical smoker. In a vertical smoker, the fire is built in the lowest of the particular chamber, many times there is a water pan directly over the fire, and the meat is smoked on racks located vertically above the fire in the lowest of the chamber. The smoke and heat travels upwards, colse to the meat cooking it and giving it that smoked barbecue flavor before exiting straight through the vents on top of the unit. A Kamado smoker is simply a specialized type of a vertical smoker.

The Kamado smoker is made out of heavy ceramic material, about an inch thick. The benefits of the Kamado smoker is that the fire can actually be maintained at very low temperatures which is good for smoking meat "low and slow." Also, because of the insulation properties of the ceramic material, a small number of charcoal fuel is used while cooking. If not used as a smoker, the Kamado makes an excellent grill, achieving temperatures as high as 725 degrees. It can be used for many types of cooking, including baking of pizza's.

Market grills that are constructed with heavy carbon steel are very high-priced and not intended for home use. family styles are more high-priced than your basic backyard grill; but then again, think of the delectable food that you'll be serving your loved ones with it!

There is a trend to 'go back to basics' and to enjoy food in its healthiest and purest form. So go ahead and try smoker grills and get back to serving healthy, home cooked meals as opposed to picking something up from a fast-food place near you.

Barbecue Talk - Smoking Versus Grilling - Which is Best?

Type of meats that are oftentimes grilled are steaks, pork chops, hamburgers, sausages (bratwursts, Italian sausage, Georgia red hots), hot-dogs, cut up chicken, etc,. Direct heat means that when grilling, the food is placed directly over the flames or heat source of the grill. Grilling is a relatively fast process in comparison to former smoked barbecue. Steaks can be cooked in ten to twenty minutes, Burgers in fifteen minutes, sausages in about twenty minutes, chicken in nearby an hour.

Why the Arguments:

Why not? Foodies love to talk about food, and talking about the differences between smoke barbecue and grilled food is a good discussion. Many food-people hold the position that neither smoked barbecue nor grilled meats are great than the other. They are both easily good ways to cook similar pieces of meat. In fact, many population who are barbecue masters cook in the grill style, and enjoy grilled meat, just as many grill master will occasionally smoke a pork butt for pulled pork.

The video shows pit with lid open, but that was for your sake, please close grill when cooking. I cooked a 12 pound turkey and it took 3 1/2 hours and 20 pounds of charcoal. The turkey tastes delicious but the smoker was entirely too big to try to heat and maintain for one turkey. I used a meat thermometer the whole time to test for doneness which is between 165 and 175 degrees.

Kamado Bbq Smoker Lies

Over Christmas I bought a Big Green Egg. I read all the marketing blurb in the brochure and it captured my imagination, I've already written about how good it is and published some kamado barbecue recipes but I was still intrigued to find out more about the origins of such a versatile piece of cooking equipment. I wrote an article about it but since publishing it, I've done more study and found that some of my original findings may have already been creative in their origins.

My introductory study on the internet considered that it's origins lay in clay cooking pots from China that were later adapted by the Japanese a few hundred years ago. The end result was the Mushikamado and finding at photographs on the internet it's pretty clear that this part of the story is clear cut.

Smoker Grill

Where things come to be a minute less clear is in the 1960's when the kamado as we know it today arrived in the Usa. There's a lot of published work that refers back to Richard Johnson, a man who founded the Kamado enterprise that it was he who brought the kamado to the Usa and also it was he that first called it a kamado and patented the name. Supplementary study leads me to believe that some of these points are not true.

The first point is that kamado is in fact a real Japanese word and not one made up by Johnson. The word kamado surely is part of the Japanese language and means stove, and to Supplementary the point there are also many derivations of the word in the Japanese language:-

Tsukikamado - other word for the stove, constructed with stones, tiles, and clay.

Koujinsan-no-kamado - In some districts, such as Saga prefecture, a large cooking range in general used for extra occasions.

The second claim made by Johnson is that he trademarked the word kamado, but true investigation at the Us patents and trademarks office has proved this claim to be untrue as well.

So who should we believe and do we surely care? finding colse to at how many businesses use the word kamado and the evidence above about how well utilized the word is in the Japanese language it would appear that some of the claims made by Richard Johnson may well be considered good marketing rather than a statement of fact.
